Wild Turkey With Apple Rum Sauce

It's Spring and that means turkey hunting time across the country. Wild turkey is different from farm raised turkey. It's not gamey and if cooked correctly is moist and delicious. Most of the time we breast out the wild turkey and are left with a very large skinless cut of meat. After cutting the meat out I place the meat in a bowl with water and allow it to soak for several hours in the refrigerator. I don't add anything to the water.                                          So what is a good way to prepare your harvest? One of our favorite ways is to use...

Apple Rum Sauce Gets National Recognition!

The past month has been a big one for not only our Apple Rum BBQ Sauce but Honey Bourbon as well. Every time I get the results I have to read them several times to make sure I'm reading it right!       Last year our sponsorship of Creekside Cookers was very successful with several including Buda Texas Weiner Dog Races Cookoff 3rd place out of 60 teams, and New Braunfels Texas Sheriff's Posse BBQ Cookoff Reserve Grand Champion.      They use our Apple Rum Sauce on ribs and the Honey Bourbon on chicken at these events. The floods in 2015 in Texas did cause a disruption of the cookoff schedule for the guys but even with that the results were awesome.   ...

Meatloaf with Honey Bourbon Sauce

Winter means comfort food and one of the easiest, hardiest comfort foods is meatloaf. Now meatloaf is sometimes the best when you use what you have in the fridge and create a one of a kind meal. I like to do this with alot of the meals I make, I'm not really big on recipes. As long as I have a general idea of what I'm making I have no problem with a little of this or alot of that. I started with 1.5 of ground beef. The rest was what I found in the fridge. That ended up being green peppers, green onions, mushrooms, and 2 mild sausages, and some provolone that ended up tucked into the middle. Here's...

Game Day Appetizers

Here in New England we are usually very lucky to be still in the playoffs thanks to the incredible talents of Tom Brady, Gronk and so many others. And  what's a football game without game day goodies. Sauces make short work of throwing a party and make you look like the hostess with the mostest!! Using sauces for dipping is a great way to offer variety. Why not set up a dipping sauce bar with 3 or 4 of your favorite sauces with several items for dipping such as chicken nuggets, baked potato wedges, jalapeno poppers, cheese sticks, or popcorn chicken.  Good choices for dipping include Apple Rum Sauce, Honey Bourbon or Cherry Habanero. Who doesn't love meatballs? Try something...

Peach Vodka Sauce- Perfect For The Holidays

Shrimp is a staple at holiday parties and the standard cocktail sauce is great, you know the one, chilli sauce and horseradish. Late at night after guests have gone to their cabins is when I do my best experimenting and the invention of Peach Vodka Sauce is no exception. I was thinking about shrimp. I like to think of my sauces as dipping sauces too and peach seemed to come to mind to be the perfect pairing for shrimp.  Our Peach Vodka Sauce is made with peach preserves, peach vodka and balanced with dijon mustard and lemon juice for a unique sauce that not only goes with shrimp but pork and chicken as well. There are so many other ways...
