Get ready for a new way to enjoy cocktail sauce! I wanted to do samplings with something different than just shrimp or kielbasa so I looked for a another way to utilize seafood. While Maine is best known for lobster and steamers clams we have a love of all things seafood.  I came up with this Crab Meat Dip. It's easy to make and everyone loves it. Best part is it's better when its made ahead of time and has time to for the flavors to meld together. . It's been such a huge hit  I've sold a lot of Tequila Lime Cocktail Sauce with Smoked Maine Sea Salt because of it!  The fact that it's gluten free is a bonus!   ...

There are so many great ways to enjoy potatoes so of course I just had to try doing them in the smoker!  I've prepared potatoes many ways over the years but combining them with cheese, bacon and our award winning Apple Rum Sauce is one of my favorites.   Even though I did these in the smoker you could easily do them in the oven.  Here's how: Wash potatoes- I use either round whites or russets.  Cook 3-4 bacon strips, cook and chop. Microwave for 5-6 minutes, you want them to be just starting to soften.  When cool slice potatoes into 1/4"...

Game Day Appetizers

Here in New England we are usually very lucky to be still in the playoffs thanks to the incredible talents of Tom Brady, Gronk and so many others. And  what's a football game without game day goodies. Sauces make short work of throwing a party and make you look like the hostess with the mostest!! Using sauces for dipping is a great way to offer variety. Why not set up a dipping sauce bar with 3 or 4 of your favorite sauces with several items for dipping such as chicken nuggets, baked potato wedges, jalapeno poppers, cheese sticks, or popcorn chicken.  Good choices for dipping include Apple Rum Sauce, Honey Bourbon or Cherry Habanero. Who doesn't love meatballs? Try something...

Apple Rum Sauce Rocks Chicken With Bacon

Looking for an easy appetizer to wow guests at parties? Chicken wrapped bacon with our Apple Rum BBQ Sauce is so easy and YUMMY!! These chicken bites are great to make ahead and just pop in the broiler when guests arrive.  I use 2 boneless skinless chicken breast and 1 pound of regular hardwood smoked bacon for 12 people. Cut the chicken in to cubes about 1.5 inches in size. Cut the bacon into thirds while it's still in the package. Wrap each piece of chicken with a strip of bacon and secure with a toothpick. I then put the chicken bites in a shallow dish and pour on our Apple Rum Sauce. If you are making these the day...
